M.O.F. Joel Schwalbach knew he wanted to become a baker at the age of seven, probably influenced by his family’s business. He obtained his CAP, the Certificat d’Aptitude Professionnelle, in Strasbourg with the French association Compagnons du Devoir. During his training, he was awarded the title of Meilleur Apprenti de France in 2006, before going on to obtain his Brevet de Maîtrise at the INBP (Institut National de la Boulangerie Pâtisserie) in 2011. In 2015, he was awarded the title of M.O.F. boulanger together with his brother, a result that confirms the excellence of their knowledge in the art of baking. In 2016, he took over the family business, Boulangerie P’tit Jean in Rohrbach-lès-Bitche, where he applies the highest standards of craftsmanship to the production of viennoiseries and breads every day. In addition, Master Schwalbach is active as a trainer and professional demonstrator in France and abroad.
