Master José Roldán Triviño combines solid technical training in baking with a continuous commitment to training new generations of professionals. In 2025, he was recognised as World Baker of the Year by the UIBC, the International Union of Bakers and Confectioners, one of the most prestigious awards in the global baking industry. Although born into a family with a long tradition of baking, he expanded his skills with technical and professional studies in baking and leavened products at top schools in Spain, France and Switzerland. From a young age, he distinguished himself in professional competitions: in 2007, he won the Copa Louis Lesaffre in Lille, and in 2008, he was a member of the Spanish team at the World Cup of Baking in Paris. His professional growth continued with a series of awards that marked key milestones in his career: in 2015, he was voted Best Artisan Baker in Spain and in 2023, he was proclaimed World Bread Baking Champion in Rimini. Today, Maestro Roldan combines his work as technical director and baker at the historic family bakery “El Brillante” in Cordoba with international training, holding masterclasses all over the world.
